In accordance with Building Regulations 2000, part H - Drainage & Waste Disposal (2002 edition), commercial kitchens must have a grease separator that meets the standards set by BS EN 1825-1:2004 and designed according to BS EN 1825-2:2002, or another equally effective method for removing grease.
